Cowboy Caviar

I thought I would share one of my favorite recipes with you.
We call this Cowboy Caviar 'round these parts.
I add a ginormous can of black beans(drained, rinsed)
a normal size can of corn(drained) and a can of rotel
Then...I add the juice of 5, for those of you not worried about can just add one...I just REALLY like limes. Put lime juice on just about anything...I will totally eat it. black beans are swimming in lime juice...mmm
Anyhoo...just like anything...make it your own...Add some cilantro, It's festive and yummy.
Eat it with a tortilla chip...or a serving spoon...whatever you like.
Happy Cinco de Mmmmmmmayo!!!
